Two 90 day periods

My wife (American) and I (Canadian) are planning an itinerary through the Schengen countries from France to Greece, which we had hoped to total 120 days.

What procedure would we need to follow to arrange two 90 day stays in the Schengen area (totalling 180 days), within two back-to-back 180 periods (totalling 360 days)?

Is it possible? Would we have to enter Europe for a day and then return 91 days later to be certain that the first 90 day stay came at the end of the first 180 day period?

Given that Canadians/Americans don't require a visa for entries under 90 days, would voluntarily applying for a 90 visa, 180 days in advance help?

You may not apply for a visa when you are exempted from it.

A foreign national who is exempted from the Schengen visa requirement may stay 90 days maximum per half-year from the date of first entry in the Schengen area.

A new 90 days period will commence the day after the aforementioned half-year period has expired, provided you have exited the Schengen area and return to it at that time.
